Chef at L'Oustau de Baumanière in Les Baux de Provence, a company head, a gardener in his off hours, a winegrower... Jean-André Charial is, in every aspect, sincere, demanding and compassionate: in other words, Mediterranean. He is the one who revived the restaurant within the O&CO. stores, with the Table de Jean-André, rue de Levis, in Paris.

Jean-André Charial has taken liberties with the tapenade and created a new recipe, in which he associated dried tomato with fresh basil, pine nuts, olive oil and a touch of balsamic vinegar.
