Ask Anthony Genovese who he is, he will tell you he is a homeless with Italian roots. Indeed, while acknowledging owing a lot to French cooking, this southern Italian born in France traveled far searching and experimenting with cooking techniques and ingredients, notably to Asia and Japan.
