Out of four Italian three-star restaurants, three are run by women. Annie Féolde, a native of Nice residing in Florence, is one - and the leader. The story began when Giorgio Pinchiorri, founder of Florence's Oenothèque wine bar, asked her to provide a few country-style dishes to go with his wonderful selection of wines. At first it was only a repertoire of simple dishes to compliment great wines. In no time, with her creativity, and deep Mediterranean roots, Annie Féolde's cuisine gradually played a starring role, making her the first woman to be given three Michelin stars in Italy. In her tapenade, Annie Féolde has grated bottargua, the same bottarga that makes as good a link between the olive and its juice as between her two lands, Provence and Italy.
